As it stands, I have written 117 one-shots (fan fiction) for the MGE website which makes my story count higher than any single user here.
Most of the fanfiction I write are from requests from users here on the site.

Wasn't there a page on the wiki somewhere that listed fanfics by the species they focus on?
Yeah you can find that fanfic list on spartan's blog. Not that it's not updated, so monsters from a certain point onward aren't listed. Like I know there's nothing of the monster 2019 or 20 but I don't know what were the most recent monsters when the list was compiled.
I also found a lot of broken pastebin links. Not all of the stories listed are necessarily going to still be there

Most of the pastebin have been nuked since it became striclty SFW, you can alway try broken the link in the wayback machine.
Touch Fluffy Tail also have a bunch of fanfic, but a lot of them are pretty bad.
I'm going to shamefully self-promote my story. I think it's good, I rather like it and the roadmap I have set in my mind but that's just the author talking. It's up to you to decide. Tell me what you think if you read it. I love reading feedback and seeing what people say. If you do read it, I hope you or anyone else seeing this likes it.
I will say this now, it is a male reader insert. Just in case you were thinking it was an OC or something.
Firstly, no shame in a little self promotion. I did it further up in the thread.
Second, I've read all of what Giant posted. I'd say it's an alright start, and others might find it a good read too. standard start, guy gets zapped into the mge and now he's gallivanting around the world. The yuki-onna is nice, but I also liked the focus on the kappa, a monster in the encyclopedia that I usually forget about, and the tsurara-onna, another monster that I really like for her personality.
I would rather die than make another account, so I can put my more specific comments in this thread, or I can mosey over to your message wall and leave them there. I will mention that I have some sharp words for what you've written so far, but it is partially from some personal feelings I have about certain fanfiction tropes. I did like what I read and while I can't promise to keep up to date on it, it sort of makes me want to see more.
Either here or on my wall is fine. You don't have to worry about harsh words. As long as it's not like "ChAnGe EvErYtHiNg! ThIs WhOlE tHiNg SuCks!" I don't care.
Ok, a bit late but here's my attempt to talk about all the things I liked and disliked about what you wrote.
I am going to start with my problems. I should stress that this stems from a personal dislike I have for a few of the tropes used in this story.
My hair bristles at the very mention of the self-insert type character protagonist. I cannot vibe with that kind of character. I cannot put myself into their shoes. I do not want to put myself into their shoes. I want to read about an actual character, who makes their own decisions and has their own thoughts. Though I grant that writing characters can be difficult. The other thing that got me was the way that the story started. I don't claim to have any better ideas about how to get your protagonist into the mge, it's just using a "yoinked into a video game" was a very standard approach. However, I did like how the character was sort of retroactively given memories of his time in the world.
I think the way the character was introduced to (3 and counting?) monsters was a great way to use them. The yuki onna and the kappa both choose their mate in childhood, so it was simple to establish their meetings with the protagonist. As for the other ice lady, a nice contrast. I like that monster. I think the three work fine together in the same group. Overall I think the story has a nice flow of events, from leaving home to meeting the second and third monster to the last point where they got to some town.
This type of story is definitely appealing, there's all sorts of ways you could involve other characters or monsters or settings, send your characters all around the world or just one region. I'd be curious to see if you have a greater narrative in mind or just a series of encounters with different people or situations.
Now I wanted to leave with a few more recommendations for reading. I haven't really ever thought to look at fanfiction.net. A lot of the stories I've found are on touchfluffytail. On that site, you do need to be aware that they have greater allowances for what people can write. Smut, monster death or violence. Though I don't typically find people writing mindless violence fests, I've stumbled across another type of nuisance. There's a lot of series people write with dozens of chapters. Some of them have these super anti-social obnoxious assholes, who I get the impression are meant to look real smart because of how they're able to mouth off to all the strong monsters. However, I have found a number of very well written one-shots. I normally browse through the tags to find specific monsters to see what people have written about that species. This gives mixed results. Some people will tag a story if it features a mention of a monster.
Anyway, some notable works I've found-
Covet corner hotel by coyo is my favorite series I've discovered on the site. It's also just a really fun concept, of this timeless interdimensional hotel that often opens up doors to other parts of the world, even across dimensions, to let people enter. You can stay for free but you share a room with a monster, so inevitably it's a great matchmaking service.
Tachaerus is an author whose work I've read most of. I think you should start with Eyes in the Dark. It's an almost overwhelmingly long work but it's worth the time to read.
Uncertain Hearts and Light in the Darkness are shorter, but both very sweet.
Forced Freedom is a bit less certain. It's about the fallen maiden who turned into a roper queen. I liked it a lot but not everyone will.
Jewel in the Desert is pretty simple, about the transformation of a girl into an apophis.
Only one I haven't read is Electrickery, but I imagine it's just as good as the others.
On a bit of faith, I'm going to recommend Little Monster Miracle Orphanage. I haven't read it or even most of the chapters, but I keep seeing them in my search. It's about a guy finding a job at a monster orphanage, so it's just filled with dozens of cute child mamono. It also primarily features the ghost, and her abilities to control a human's body. The ghost gets overlooked by a lot of undead mamono, I think. This story seems to do a lot of justice for her.
They also regularly hold contests based on story themes every month, so you get a new crop of stories that are usually pretty up to snuff. A few months ago I found their submissions for the soldier beetle/automaton contest, and having never found a soldier beetle story at that point, I loved every one.
@Gnomehunter I think I'm pretty good at creating characters. I know not everyone likes reader inserts but eh. That's just what I do for Wattpad. I am writing an actual book though that I'm hoping will be a great story for people to read.
I will admit, I did do the cliche intro but that was the only thing I could think of that could make sense. Plus, there are MGE games out there so it's good to go off of that. I don't think they're canon but they're there right? Plus, that will be explained more eventually once I get around to it.
I'm not gonna lie, I actually wasn't even planning on the kappa being a childhood friend until I looked at the encyclopedia entry and I'm like, "Ok. Time for two childhood friends."
As for the last words, it'll be both. There will be a greater, more larger story when it's done and revealed but also encounters and situations that the MC will go through and solve. Some will contribute to the main story and others are just kinda like side quests... I just now realized that I said side quests and he was sucked into a game... Huh...
