What should it mean to be dominant in the relationship for mamonos? Is it just at the time of intercourse or not? Or does this dominant personality also affect the couple's life outside of bed?

It's open to interpretation.
Ogres, for example, switch from dominant to submissive if their husband manages to exhaust them during sex twice in a row, but we don't know if that means their behaviour outside of the bedroom changes accordingly.
Amazoness expect their husbands to be submissive housekeepers, and Dark Elves and Vampires treat them like servants (Vampires stop doing so when their husband becomes an incubus), but we don't know how far they take it...
The reverse is also true: Hinezumis, an aggressive species, become submissive during sex, but we don't know if they remain submissive afterwards, or they revert to their strong-willed selves...
My interpretation is that dominance and submission are in the relationship as a whole and not just in bed.
Very few profiles discern how the dynamic works outsied of the bedroom as Galeah mentions, but it hints towards it in KC's update about Werewolves in the RPG.
This is however not deciding for other races and unless stated then we can't say for sure.
The Werewolf's profile explicitly says the man who manages to become dominant will be regarded as their superior and the boss of the pack. The Werewolves may not become timid, but they will at least become obedient, even outside of sex...
Same for Orcs and High Orcs, it seems they become submissive during sex and outside of sex (their personality changes from strong-willed, ferocious, mischievous, bold and malicious to timid and devoted).
We don't really have a clue about how much the personality of Ogres, Hinezumis and Dragons changes after recognizing a human as dominant...
Aren't Dragons noted to lose their pride and become submissive as a change?
Exactly. As it is said in Dragonia guide that marriage collars will only be worn by dragons whose partner is stronger then them. But even then they wear it with pride because instead of being ashamed of strangled down and forced in submission it is a shown sign of that they got a strong husband that manages to defeat a dragon and they are his.
Yes, but the collar is mostly a SM sex toy... we don't really know how submissively these Dragons behave outside of sex.
Being married to a Dragon and being weaker so she won't wear a collar and will struggle with showing affection because she values her pride on par with you?
Meanwhile some teenage prodigy hero that was born OP like Mimil has a dragon wife fawning over him and gleefully showing of that they are a couple.
Dragons kinda suck in MGE, and not in the good way.
@Galeah actually the collar came from being a sign of slavery so it is a sign of submission. It is only that in our modern time we do not see them as this anymore.
@TheSapphireStar97 that is why part of in-game lore many people prefer Wyverns as their partner as they are actually friendly and docile.
Yeah, but we still don't know if the Dragon is submissive outside of sex; for mamono everything is about sex, so the collar may just mean "my husband is dominant during sex...".
The Dragon explicitly caters to the fetish of dominating an arrogant woman; that's what they are for... if you aren't into that, just go for a Jabberwocky, a Ryu or a Wurm...
What do you think?
