Uhm... they are the physical strongest in lore. Yes they are KC's favorite and that's why they are so powerful overall.
Dragons, Wyverns, Wurms. Ushi-onis, Griffons, Races I will soon mention further down ar all very strength even amongst mamono, but there isn't a single illustration featuring them with muscles.

However Mamono are made to be inherently sexy and beautiful through inherent demonic energy. it makes sense that they aren't muscular despite their strength or dominant disposition. Making a fantasy setting fit real life standards for biology isn't good writing and the opposite isn't bad writing.
You can go over all the details you want how muscules work for real life beings, but mamono do not adhere to it. They are a different type of being from humans.
I do not see your suspension for belief in this setting.
I used the term "steroid freaks" as a reference to a stereotype, not actual scientific backing.
I didn't mean that muscles are stone or anything, but I much more prefer softness of a typical feminine body and I find muscles visually unnattractive aswell.
Wild beastmen for example wouldn't actively train as predators conserve their energy between hunts and occasional disputes.
Warrior mamono would be more suscepticle to it, but still not the most common body-type for them.
Salamanders, Amazones, Ocelomehs, High Orc etc aren't muscular in in any of their illustrations despite being warrior races.
Pretty much any mamono can be muscular to fit your tastes, but it's far from a standard for most races.

The illustrations in the monster girl encyclopedia are the average forms of those races in general.
